Roasted or Grilled Salmon

Here is a wonderfully simple way to Grill or Roast Salmon.
Wild Pacific Salmon is in season for a short time and is a real treat!
Serves:
4Ingredients
Ingredient section one
4 (6-ounce) salmon fillets, about 1-inch thick
Pinch cayenne pepper
1/2 teaspoon salt
1 teaspoon ground cumin
Ingredient section two
2 teaspoons finely grated lemon zest
4 teaspoons chili powder
2 tablespoons light brown sugar
Preparation
Rub your Salmon with Extra Virgin Olive Oil – just enough to have a light shine –and season with fine Sea Salt and Fresh Black Pepper.
Pan sear to achieve a nice brown colour OR place in a very hot oven 450F for approximately 4 minutes.
Cook for an additional minute or two depending on the size of the salmon steaks.
Salmon should be served Medium Rare but serve it any way you like it.
Finishing your Salmon with a zesty glaze is a nice touch, for example in the store we like to finish with Honey-Dijon and Fresh Thyme!
Serve with anything you like from Arugula Salad, to Rice, Potatoes, Quinoa... The possibilities are endless.
